Malaysian Recipe : Ayam Gulai Lemak Cili Padi Negeri Sembilan

Preparation and Cooking time : 30 min
Serves 8 to 10
Per person : 14g fat, 233 kcal (974 kilijoules)

Ingredients:

  • 1.5 kg chicken

A:

  • 20 bird's chilies (finely blended)
  • 3 cm fresh turmeric (finely blended)
  • 3 shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 2 stalks lemon grass, lightly crushed
  • 500ml coconut milk, thin
  • 250 water
  • 2 chicken stock cubes (Maggi ®)

Directions:

  1. Clean and cut chicken into 12 pieces. In a saucepan, stir in ingredients A and add chicken pieces. Cook over low heat until water dries up.
  2. Stir in coconut milk, water and chicken stock cubes. Cook over low heat. Stir continuously.
