Malaysian Recipe : Ayam Kicap Bersantan Selangor

Serves 8 to 10
Per person : 25 g fat, 386 kcal (1614 kilojoules)
Ingredients:
A:
- 20 dried red chilies, soaked
- 8 shallots
- 5 cloves garlic
- 4 cm ginger
- 3 cm young galangal
- 2 stalks lemon grass
- 1 tsp coriander seeds
- 1 tsp cumin
- 1.5 kg chicken, cut into 12 pieces
- ½ cup cooking oil
B:
- ½ cup water
- 1 cup coconut milk, thick
- ½ cup dark soy sauce
- 2 chicken stock cubes (Maggi ®)
- 3 tbsps brown sugar
- 3 tbsps tamarind juice, thick
Directions:
- Blend ingredients A until fine. Marinate chicken pieces and leave for 20 minutes.
- Heat oil and stir fry marinated chicken pieces.
- Stir in ingredients B and cook over slow heat until gravy thickens.
