Malaysian Recipe : Ayam Lengkuas Sabah

Serves 4 to 6
Per person : 14g fat, 239 kcal (999 kilojoules)
Ingredients:
A:
- 10 shallots
- 6 cm galangal
- 4 cloves garlic
- 2 tbsps soy bean paste
- 2 tbsps chili paste
- 4 tbsps cooking oil
- 700g chicken, cut into small pieces
B:
- 1 cup water
- 2 tsps light soy sauce
- 1 tsp dark soy sauce
- 1 chicken stock cube (Maggi ®)
- Pepper to taste
Directions:
- Combine ingredients A and blend until very fine. Add in soy bean paste and chili paste.
- Heat oil and stir fry mixture until aromatic. Add chicken pieces and fry for 2 minutes.
- Stir in ingredients B and bring to the boil. Simmer until chicken is tender and gravy is thick.
