Malaysian Recipe : Ayam Masak Putih Sarawak

Preparation and Cooking time: 30 mins
Serves 6 to 8
Per person : 23 gm fat, 371 Kcal (1,552 kilojoules)
Ingredients:
A:
- 6 shallots
- 3 cm galangal
- 4 cloves garlic
- 3 cm ginger
- ½ tsp white peppercorn
- ½ tsp black peppercorn
- 4 tbsp cooking oil
- 1 kg chicken, cut into small pieces
- 1 cup coconut milk, thin
- 2 chicken stock cubes (Maggi ®)
- 1 cup coconut milk, thick
- 2 tomatoes, cut into wedges
Directions:
- Combine ingredients A and blend until very fine. Heat oil and stir fry blended ingredients mixture until aromatic. Add chicken pieces and fry for 2 minutes.
- Stir in thin coconut milk and chicken stock cubes. Simmer for 3 minutes.
- Add thick coconut milk and simmer for 4 minutes. Stir continuously.
- Add tomatoes and remove from heat.
