Malaysian Nyonya Recipe : Ayam Tempra

Spicy chicken is a Nyonya Dish

Ingredients:

A:

  • 1 tsp salt
  • 1 tsp msg

B:

  • 1 tbsp dark soy sauce
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ tsp MSG
  • 2 tsp lime juice
  • 8 fl. oz. water
  • 2 lbs chicken, cut into pieces
  • 8 green chilies
  • 6 red chilies
  • 5 tbsp oil
  • 8 oz onion, cut into rings

Directions:

  1. Marinate the chicken in A for 30 minutes.
  2. Slice the chilies diagonally, thickly.
  3. Mix B in bowl.
  4. Heat iron wok. When very hot, heat 4 tbsp oil and fry onions and chilies for ½ minute.
  5. Add the marinated chicken and stir-fry over high heat till cooked (7 minutes). Add B from step 3 and cook for another 5 minutes.
  6. Lower the heat, cover wok and cook gently for 20 minutes, or till chicken is tender.
  7. Remove lid, add the last tablespoon of oil, stir well and serve hot or cold.
