Malaysian Recipe : Beef Sambal

Serves: 6
Ingredients:
- 600 g tenderloin beef, sliced thinly
- 5 pcs limau purut leaves
- Salt to taste
- ½ cup oil
A: Ground to a paste
- 150 g shallots
- 6 candlenuts (buah keras)
- 50 g dried chilies
- 3 stalks lemon grass, crushed
Seasoning:
- 1 tsp salt
- ½ tsp pepper
- 1 tsp sugar
Directions:
- Marinate the meat with the ingredients A and set aside for an hour.
- Heat the oil and in a wok and brown the marinated beef. Cook until the mixture is dry and oily. Stir continuously.
- Add the limau purut leaves and seasoning. Stir till its well mixed.
- Dish and sprinkle on top with fried shallots. Serve with nasi minyak or ketupat.
- Instead of beef, you may use any other meat of you choice, except fish.
