Brunei Recipe : Black Glutinous Rice Pudding

Ingredients:

  • 100g black glutinous rice
  • 250g sugar
  • 160ml water
  • 300ml thick coconut milk
  • 200ml thin coconut milk
  • 1 pandan leaf
  • ¼ tsp salt

For decoration:

  • A little thick coconut milk

Directions:

  1. Boil black glutinous rice until soft. Set aside.
  2. Boil sugar, water and pandan leaf together.
  3. Add salt, thick and thin coconut milk to the sugar syrup.
  4. Let it boil for 5 to 8 minutes.
  5. Add cooked glutinous rice to the mixture. Stir to combine.
  6. Drizzle thick coconut milk on glutinous rice.
  7. Serve hot or cold.
