Singaporean Recipe : Butter Jelly

Ingredients:

  • 250ml fresh milk
  • 3 tbsp agar-agar powder
  • 400 ml thick coconut milk (from 1 coconut)
  • 200 ml water
  • 2 egg yolks
  • 125 g butter

Directions:

  1. Combine the first five ingredients in a pot. Stir till boiling, reduce heat to simmering point.
  2. Beat egg yolks in a small bowl.
  3. Pour a ladle of the hot agar-agar mixture into the egg yolk, stirring till well mixed.
  4. Then pour egg mixture back into pot. Stir to mix well. Put in the butter and stir till it melts.
  5. Remove from heat and pour into a rinsed mold. Leave to set before turning out.
