Malaysian Recipe : Chicken with Chinese Mushrooms

Preparation time: 30 mins
Cooking time: 30 mins
Serves: 6


  • 1 chicken drumstick, cut into bite-size pieces
  • 2 chicken wings, cut in two


  • 2 tbsp oyster sauce
  • ½ tsp sugar
  • 1 tsp sesame oil
  • 2 drops of thick soy sauce
  • 50g Chinese mushrooms, washed and soaked. Cut and remove the stalks.
  • 50 g young ginger, sliced thinly


  1. Marinate chicken with seasoning for at least 10 mins.
  2. Place 150ml of water and Chinese mushrooms in a pan, cover and simmer for 10 mins. Drain and discard the water.
  3. With 2 tbsp oil in a saucepan, dry the shredded ginger till fragrant. Add in the seasoned chicken. Stir fry until well coated.
  4. Add in the mushrooms and cover. Cook on low heat for 10 mins. Turn off the fire and allow to stand for 10-15 mins before serving.
  5. Garnish with spring onions, sliced into 2cm lengths.
