Malaysian Recipe : Chicken with Chinese Mushrooms

Preparation time: 30 mins
Cooking time: 30 mins
Serves: 6
Ingredients:
- 1 chicken drumstick, cut into bite-size pieces
- 2 chicken wings, cut in two
Seasoning:
- 2 tbsp oyster sauce
- ½ tsp sugar
- 1 tsp sesame oil
- 2 drops of thick soy sauce
- 50g Chinese mushrooms, washed and soaked. Cut and remove the stalks.
- 50 g young ginger, sliced thinly
Directions:
- Marinate chicken with seasoning for at least 10 mins.
- Place 150ml of water and Chinese mushrooms in a pan, cover and simmer for 10 mins. Drain and discard the water.
- With 2 tbsp oil in a saucepan, dry the shredded ginger till fragrant. Add in the seasoned chicken. Stir fry until well coated.
- Add in the mushrooms and cover. Cook on low heat for 10 mins. Turn off the fire and allow to stand for 10-15 mins before serving.
- Garnish with spring onions, sliced into 2cm lengths.
