Malaysian Recipe : Coconut Rice

Ingredients:
- 2 cups rice
- 2 cups water
- 1 cup coconut milk
- ½ cup desiccated coconut
- ½ tsp salt
- 1 onion, minced
- 1 clove garlic, minced
Directions:
- Wash rice and place in a heavy saucepan. Pour in water, coconut milk, desiccated coconut, salt, onion and garlic. Stir to mix thoroughly and bring to the boil.
- Stir once more, then cover with a lid, reduce the heat and simmer for twenty minutes.
Coconut rice can be made a day before and reheated by steaming. Or place in a greased baking dish, add ½ cup water, cover with aluminum foil and heat in a moderate oven for twenty minutes.
