Vietnamese Recipe : Crispy Noodles with Sour Pickle

Ingredients:
- 100g vermicelli noodles, soaked in boiling water for 5 minutes and drained
- 4 red chilies, thinly sliced
- 3 shallots, thinly sliced
- 1 stalk coriander leaves, chopped
- 1 stalk mint leaves, chopped
- 20g belacan powder
- Oil for frying
Sour pickle ingredients:
- 1 lemon, sliced
- 4 shallots, sliced
- ¾ tbsp salt
- 100ml water
- 85g palm sugar
- 50ml white vinegar
- ¾ tbsp fish sauce
Directions:
- Add chilies, shallots, coriander leaves, mint leaves and belacan powder to noodles.
- Heat oil in a skillet.
- Place 4 to 5 tbsp of noodle mixture in the skillet. Flatten them.
- Fry flattened noodle mixture until golden brown or crispy.
- Drain of kitchen towel.
- To prepare pickle, combine lemon, shallots, salt and water and cook for 10 minutes. Add sugar, vinegar and fish sauce. Mix well and let it thicken.
- Serve with crispy noodles.
