Malaysian Recipe : Curry Chicken (Microwave)

Serves 4 to 6
Ingredients:
- 500 g chicken pieces
- ¼ cup coconut milk
- ¼ cup water
- 1 tsp salt
A:
- 3 cm cinnamon stick
- 30 g lemon grass, crushed
- ½ tbsp curry powder
- ½ tbsp chili powder
- 80 g shallots and 15 g garlic blended with ¼ cup oil
Directions:
- Combine ingredients A and fry in a casserole on power High, uncovered for 6 minutes.
- Add in water, salt and chicken pieces.
- Cover and cook on power High for 5 to 6 minutes.
- Stir in coconut milk and cook on power High, uncovered for 2 minutes.
- Serve hot with rice/noodles.
