Malaysian Recipe : Curry Kapitan

This old-time favorite Nyonya dish with is spicy flavor is just the right dish to turn your ordinary dinner into a special occasion.

Preparation time: 30 mins
Cooking time: 30 mins
Serves: 6


  • 1 whole chicken, cut into 10 pieces
  • 240ml coconut milk, from 1 coconut
  • 100g fried shallots
  • 2 limes cut into wedges
  • ½ tsp sugar
  • ½ cup oil

To grind:

  • 200g shallots
  • 8 red chilies
  • 3 stalks lemon grass
  • 4 pips garlic
  • 5 pcs candlenuts
  • 1 small pc tumeric root
  • 30g dried chilies
  • 30g galangal


  1. Heat oil in a saucepan. Fry the ground ingredients till fragrant.
  2. Add in the chicken pieces. Stir-fry until chicken is well coated with ground ingredients. Stir in the coconut milk
  3. Simmer on low heat until chicken is tender. Add salt and sugar to taste.
  4. Just before serving, squeeze lime juice onto the curry and garnish with fried shallots.
