This old-time favorite Nyonya dish with is spicy flavor is just the right dish to turn your ordinary dinner into a special occasion.

Ingredients:
- 1 whole chicken, cut into 10 pieces
- 240ml coconut milk, from 1 coconut
- 100g fried shallots
- 2 limes cut into wedges
- ½ tsp sugar
- ½ cup oil
To grind:
- 200g shallots
- 8 red chilies
- 3 stalks lemon grass
- 4 pips garlic
- 5 pcs candlenuts
- 1 small pc tumeric root
- 30g dried chilies
- 30g galangal
Directions:
- Heat oil in a saucepan. Fry the ground ingredients till fragrant.
- Add in the chicken pieces. Stir-fry until chicken is well coated with ground ingredients. Stir in the coconut milk
- Simmer on low heat until chicken is tender. Add salt and sugar to taste.
- Just before serving, squeeze lime juice onto the curry and garnish with fried shallots.
