Malaysian Recipe : Devil Curry (Microwave)

Serves 4 to 6
Ingredients:
A:
- 100 g shallots (finely chopped)
- 10 g garlic (finely chopped)
- 50 g ginger (finely chopped)
- 40 g fresh red chili and 10g dried chili (soaked) blended together to paste
- 1 tsp. cumin powder
- 4 tbsp oil
B:
- ¼ cup water
- 1 tsp thick soya sauce
- 1 tbsp Chinese black vinegar
- ½ tsp salt
- 2 tsp sugar
Directions:
- Combine ingredients A and fry in a casserole on power High, uncovered for 8 to 10 minutes.
- Add in ingredients B and chicken pieces.
- Cover and cook on power High for 6 minutes or until meat is done.
- Serve hot with rice.
