Malaysian Recipe : Double Boiled Shark's Fin Soup

Cooking time: 1 hr 30 mins
Serves: 6
Ingredients:
- 200 g sharks fin, washed and drained
- 350 g chicken fillet, shred finely
- 120 g cooked ham (optional)
- 100 g abalone, drained
- 5 dried Chinese mushrooms, soaked and shredded
- 1 litre chicken stock
Seasoning:
- 1 1/2 tsp soy sauce
- ½ tsp salt
- ½ tsp pepper
Thickening:
- 1 tbsp cornflour mixed with ½ cup water
Directions:
- Boil chicken stock in a saucepan, add in chicken and allow to simmer for 10 mins.
- Add the mushrooms, ham and abalone. Transfer the soup into a casserole. Place the casserole into a larger saucepan with 1 liter of hot water. Cover and double boil for 1 hour on low heat.
- Remove from heat, add seasoning and thickening, Place the casserole over a medium heat and cook till soup boils.
- Pour soup into 6 individual bowls and serve with Chinese vinegar.
