Malaysian Recipe : Fish in Banana Leaves (Ikan Dalam Daun Pisang)

Serves 4 to 6
Ingredients:
- 1 kg fish fillet, sliced 1.5 cm thick (6 slices)
- 50g Chinese mushrooms, soaked and sliced
- 1 carrot shredded
- 150g bamboo shoots, shredded
Seasoning:
- 3 tbsp ginger juice
- 1 tbsp sesame oil
- 1 tbsp coarsely ground black pepper
- ½ tsp salt
- 1 tbsp cornstarch
- 6 large pieces (30cm x 30xm) banana leaves
Directions:
- Marinade fish with seasoning for half and hour. Be sure to rub it in well.
- Scald banana leaves in hot water. Remove and soak in cold water.
- Arrange fish, mushrooms, carrots and bamboo shoots onto a banana leaf. Spoon on the marinade. Wrap into neat parcels.
- Place in a prepared Steamer and cook for 15 minutes.
- Garnish with Chinese celery and shredded chilies. Serve hot.
