Malaysian Recipe : Fried Kway Teow

This is a one-dish meal.

Serves 2

Ingredients:

  • 1 slab flat rice noodles, cut into thin strips
  • 100 g fresh prawns, shelled
  • 1 chicken breast, deboned and thinly sliced
  • 2 to 3 stalks chives, cut into 4 cm bean sprouts
  • 1 to 2 eggs
  • ½ tbsp minced garlic
  • A handful of shelled cockles
  • Chili paste to taste
  • White pepper to taste
  • Light soy sauce to taste
  • Dark soy sauce to taste
  • 2 to 3 tbsp oil or lard

Directions:

  1. Heat oil in a pan and fry the garlic until fragrant. Then add the bean sprouts and rice noodles and toss for awhile
  2. Add in prawn and chicken and stir fry. Season with light ad dark soy sauce, and then chili paste.
  3. Break in one or two eggs, and stir fry for a few seconds.
  4. Dish onto a plate, sprinkle over with pepper, and serve.
