International Recipe : Ginger Curry Mussel Stew

Ingredients:

  • 1 tbsp olive oil
  • 1 clove garlic, chopped
  • 2 shallots, chopped
  • 4cm ginger, grated or julienned
  • 2 tbsp meat curry powder
  • 1 kg mussels
  • 250ml water or to taste
  • 2 tomatoes, seeded and diced
  • 2 tbp chopped coriander

Directions:

  1. In a saucepan, heat the olive oil and sweat the garlic, shallots and ginger until aromatice.
  2. Add a little water to the curry powder to make a paste and add to the pan; fry for a minute, stirring continuously until aromatic.
  3. Add the mussels, and cook until mussels are open.
  4. Add coconut milk and enough water to achieve the desired consistency; add tomatoes and coriander and bring to a low boil. Remove from heat.
  5. Serve with crusty bread or rice to soak up the curry.
