Malaysian Recipe : Glutinous Yam Dessert

Ingredients:

  • 500g yams or orange-colored sweet potatoes
  • 2 tbsp sugar
  • ½ tsp salt
  • 1 egg
  • 4 tbsp rice flour
  • Oil for deep frying
  • Icing sugar

Directions:

  1. Peel the yams or sweet potatoes and steam until soft. Place in a large bowl and mash. Add the sugar, salt and beaten egg.
  2. Stir in the flour and if the mixture is too thin, add more rice flour.
  3. Shape into small round balls. Sprinkle with a little flour and deep-fry for 5 minutes. Drain on absorbent paper and serve hot or cold, sprinkled with icing sugar.
