Malaysian Recipe : Green Beans with Pearl Sago

Ingredients:

  • 1 lb grated coconut
  • 3 oz pearl sago
  • 21 oz green beans
  • 12 oz coarse sugar
  • 8 oz palm sugar
  • 6 screw pine leaves tied into a knot
  • 1 tsp salt

Directions:

  1. Squeeze grated coconut for approximately 7 fl oz. First-round milk. Add 16 fl oz. water and squeeze for Second-round milk.
  2. Soak pearl sago for 10 minutes. Drain.
  3. Boil green beans with 2 pints cold water for 20 minutes over high heat.
  4. Add 4 ½ pints of cold water to bring to the boil. Reduce heat to moderate and continue boiling till beans are tender and swollen.
  5. Put in pearl sago and cook till sago turns transparent. Add Second-round milk, the two types of sugar and screw pine leaves and cook till it becomes to a boil. Add First-round milk, salt and cook for 2 minutes. Remove from heat and serve.
