Asian Recipe : Indonesian Vegetable Salad

Ingredients:

  • ½ cup cooked green beans
  • ½ cup cooked cabbage, cut into squares
  • 1 cup bean sprouts, blanched
  • ½ cup fried potatoes, cut into rounds
  • ½ cup cooked carrot sticks
  • 1 small cucumber, peeled and cut into chunks
  • 2 hard-boiled eggs, quartered

Gado-gado sauce:

  • 1 red chili, finely minced
  • 2 cloves garlic, crushed
  • 1 tbsp vegetables oil
  • ½ cup peanut butter
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup coconut milk
  • ¼ cup water

Directions:

  1. Arrange vegetable attractively on platter. Garnish with fried potatoes and eggs.
  2. Gado-gado sauce: Fry the chili and garlic in the oil for 1 minutes. Add the peanut butter, sugar, salt and stir continuously to cook for another minutes.
  3. Pour in the coconut milk and water, stirring constantly until thickened. Correct seasoning.
  4. Pour over the platter of vegetables.
