Malaysian Recipe : Kuzi Ayam Kelantan

Serves 6 to 8
Per person : 25 g fat, 1071 kcal (17025 kilojoules)
Ingredients:
- 15 dried red chilies, soaked
- 6 red chilies
- 20g shallots
- 2 cm ginger
- 1 sachet Curry Nasi Kandar Mix (Maggi ®)
- 100g ghee
- 1 kg chicken, cut into pieces
- 6 tbsps tomato ketchup (Maggi ®)
- 300 ml evaporated milk
- 1 chicken stock cube (Maggi ®)
- 600 ml water
- 100g black raisins
- 600 g fried shallots, sliced
- 100 g 'kerisek'
- Coriander leaves
- Fried cashew nuts
Directions:
- Blend ingredients A. Add in Curry Nasi kandar Mix and mix well. Set aside for 20 minutes.
- Heat oil and stir fry ingredients A until aromatic. Add chicken pieces and tomato ketchup. Fry for 2 minutes.
- Stir in evaporated milk, chicken stock cube, water, raisins, and fried shallots. Bring to boil, simmer gently until chicken is tender.
- Stir in 'kerisek', salt and sugar to taste. Garnish with coriander and cashew nuts.
