Malaysian Recipe : Lamb Sate

Ingredients:

  • 500g lean lamb
  • 2 cloves garlic, minced
  • 1 onion, minced
  • ½ cup vegetable oil
  • 1 tbsp sweet soy sauce
  • 1 tsp sugar
  • 2 tsp salt
  • 1 tsp shrimp paste (belacan), mashed
  • Bamboo skewers

Directions:

  1. Cut lamb into small dice and place into a deep bowl.
  2. Mix garlic, onion, vegetable oil, soy sauce, sugar, salt and belacan together and mix into diced lamb. Allow to marinate at least one hour.
  3. Moisten pointed tips of bamboo skewers and thread three or four pieces on each.
  4. Cook over red-hot charcoal, rotating skewers frequently.
  5. Baste with marinade which has 1 extra tablespoon of oil added. Serve immediately.
