Malaysian Recipe : Lamb Sate

Ingredients:
- 500g lean lamb
- 2 cloves garlic, minced
- 1 onion, minced
- ½ cup vegetable oil
- 1 tbsp sweet soy sauce
- 1 tsp sugar
- 2 tsp salt
- 1 tsp shrimp paste (belacan), mashed
- Bamboo skewers
Directions:
- Cut lamb into small dice and place into a deep bowl.
- Mix garlic, onion, vegetable oil, soy sauce, sugar, salt and belacan together and mix into diced lamb. Allow to marinate at least one hour.
- Moisten pointed tips of bamboo skewers and thread three or four pieces on each.
- Cook over red-hot charcoal, rotating skewers frequently.
- Baste with marinade which has 1 extra tablespoon of oil added. Serve immediately.
