Malaysian Recipe : Long Bean Omelet

Ingredients:

  • 4 oz long beans, cut into very fine rounds
  • 1 tbsp oil
  • 4 large eggs
  • 2 oz minced pork
  • 2 oz minced prawns
  • 4 tbsp chopped salted preserved radish
  • ½ tsp MSG
  • ¼ tsp salt
  • Dash of pepper
  • Lard or oil

Directions:

  1. Fry the long beans in a tablespoon of oil for ½ minute. Set aside.
  2. Break eggs into a large bowl, beat lightly. Add the long beans and the rest of the ingredients and beat till well mixed.
  3. Heat a frying pan and pour enough oil to fry the omelet till light golden brown on both sides. Serve hot or cold.
