Thai Recipe : Marinated Braised Beef with Cucumber

This dish in Thai is called Nua Ob

Serves 4

Ingredients:

  • 1 tbsp vegetable oil
  • 2 lbs lean beef, large 1 inch thick steaks
  • ¾ cup water
  • 1 cucumber, peeled and finely sliced or 1 Chinese lettuce, sliced
  • ¾ inch piece fresh ginger root
  • Fresh coriander leaves, to garnish

Marinade

  • 4 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 6 coriander roots
  • 3 tbsp ground black pepper
  • 1 tbsp sugar

Directions:

  1. To prepare marinade: Combine ingredients in a blender and process to a smooth paste. Smear beef with paste and marinate for at least 10 minutes.
  2. Smear a wok or frypan with oil. Sear marinated beef. Add water and braise briefly until medium-rare. Remove beef and, if preparing in advance, cover with foil and reserve the sauce.
  3. Just before serving, slice beef finely. Arrange warm or cool beef on a bed of sliced cucumber. Simmer reserved sauce and add ginger (either the whole piece, which can be discarded before serving, or finely chopped). More soy sauce, sugar or water can be added if required.
  4. Pour sauce over beef and cucumber. Serve garnished with fresh coriander leaves.
