Malaysian Recipe : Mi Goreng Indian Style

This is a one-dish meal.

Serves 2 to 3

Ingredients:

Pound together:
  • 4 to 6 fresh red chilies
  • 2 cloves garlic
  • 4 cups water
  • 2 packet instant prawn noodles
  • ½ cup shallots, thinly sliced
  • ¼ cup cooking oil
  • ¾ cup shelled prawns
  • 1 cup bean sprouts
  • 4 stalks mustard leaves, cut into 5 cm lengths

Ingredients A:

  • 1 sachet prawn flavor from noodles
  • ½ cup hot water
  • 2 tbsp tomato ketchup
  • 1 tsp thick soy sauce
  • Salt to taste
  • 1 tomato, cut into 8 wedges
  • 1 green chili, sliced

Directions:

  1. Pound chilies and garlic finely
  2. Bring about 4 cups water to a fast rolling boil. Add instant noodles and blanch until strands of noodles separate, about 1 minute. Drain noodles.
  3. Heat oil and lightly brown shallots; remove shallots from pan.
  4. In remaining oil, stir fry chili paste until fragrant. Add prawns, stirring until they turn pink.
  5. Stir in bean sprouts and mustard leaves and cook 1 more minute. Add blanched noodles and ingredients A. Mix thoroughly until noodles are cooked through. Stir in tomatoes and salt to taste.
  6. Garnish with fried shallots and green chili. Serve at once.
