Malaysian Recipe : Mi Rebus Johor

Serves 4 to 6
Per person : 185 g fat, 9178 kcal (38382 kilojoules)
Ingredients:
A:
- 1 litre water
- 500g beef
- 300g beef bones
B:
- 15 dried red chilies, soaked
- 10 shallots
- 3 cloves garlic
- ½ cup dried shrimp, soaked until softened
- ½ cup cooking oil
- ½ cup boiled dhal, finely blended
- 200 g sweet potatoes, boiled and mashed
- 2 chicken stock cubes (Maggi)
- 2 tbsps sugar
C:
- 500g yellow noodles, blanched
- 400g mustard leaves, blanched
- 150g medium prawns, blanched
- 10 eggs, boiled
- Spring onion and local celery, sliced
- Red chilies, sliced
- Shallots, fried
- Limes wedges
Directions:
- Boil ingredients A until beef tender. Strain and reserve the beef stock. Thinly slice boiled meat and set aside.
- Blend ingredients B, stir fry until aromatic. Add reserve stock, blended dhal and mashed sweet potatoes. Stir well.
- bring to boil and add chicken stock cubes and sugar. Simmer until gravy slightly thickens.
- Serve with ingredients C.
