Malaysian Recipe : Mixed Rice

This is a one-dish meal.

Serves 3 to 4

Ingredients:

  • 2 cups rice, washed
  • 3 cups hot water
  • 3 tbsp oil
  • 1 tsp salt
  • 2 cm piece cinnamon
  • 1 star anise
  • 2 cloves

Topping:

  • 300 g chicken meat
  • 100g salted fish, shredded
  • 2 tbsp oyster sauce
  • 1 tsp pepper
  • 1 tsp sesame oil
  • 1 tsp cornflour
  • 3 tbsp finely shredded ginger
  • 3 tbsp finely shredded carrot

Directions:

  1. Heat up 1 tbsp oil and fry cinnamon, star anise and cloves until fragrant. Add rice and salt and mix well. Put into a rice cooker, add water and leave to boil.
  2. Heat up 2 tbsp oil, fry salted fish until crispy. Dish and set aside.
  3. Mix chicken meat with oyster sauce, pepper, sesame oil, cornflour, ginger and carrot.
  4. When rice has boiled, put chicken meat mixture on top of rice. Cover and leave to cook in the rice cooker until almost dry.
  5. Sprinkle salted fish on top and leave to stand for at least ½ hour before serving (so that the rice will be completely dry and fluffy)
  6. Mix everything in rice cooker thoroughly before serving.
  7. Serve hot with shredded red chili.
