Malaysian Recipe : Nasi Minyak

Ingredients:
Ground to paste:
- 20 g turmeric roots, fresh
- 2 large onions
- 5 cloves, crushed lightly
- 1 pc cinnamon stick
- Salt to taste
- 2 tbsp corn oil
Directions:
- Wash basmati rice thoroughly and pick out the husks and small stones.
- In a saucepan, fry ground ingredients, cloves and cinnamon stick in 2 tbsp corn oil.
- Add rice and stir till well coated. Pour in water till it is about 2 cm above the rice.
- Bring to a boil on medium heat. Turn the fire down to low, and simmer for 10 mins. Water seal and turn off the heat. Do not open.
- When ready to serve, fluff up the rice with a fork. Serve hot, garnished with fried shallots and hard boiled eggs.
- The use of Basmati rice is important in this dish as other types of rice may not be as fragrant and its texture different.
