Malaysian Recipe : Nasi Ulam

Serves 8

Ingredients:

  • 1 lb small prawns, shelled
  • ½ lb wolf herring (ikan parang), remove centre bone
  • 6 oz grated coconut, white
  • 2 oz long beans
  • 1 cucumber
  • 2 lb cooked rice, cooled
  • 1 tbsp light soy sauce
  • 6 lime leaves, sliced very thinly
  • 2 turmeric leaves, sliced very thinly
  • 2 oz dried shrimps, optional
  • Cooking oil
  • Salt

Directions:

  1. Fry prawns with a pinch of salt.
  2. Season fish with salt and fry with oil till cooked. Break fish into small pieces and place under grill for 10 minutes or till dry.
  3. Add a pinch of salt to the coconut and fry in an iron wok over low heat till light brown, stirring all the time. Cool.
  4. Scald and cut long beans into very fine pieces.
  5. Skin cucumber, remove soft centre and cut into tiny cubes.

To serve:

  1. Place the cooled rice in a large bowl.
  2. Sprinkle ½ tsp fine salt and 1 tbsp light soy sauce, and mix well.
  3. Add the prepared ingredients, together with the lime leaves, turmeric leaves and dried shrimps. Stir with two wooden spoons till well mixed. Serve cold.
