Malaysian Recipe : Noodles with Tomato and Tuna Sauce

This is a one-dish meal.

Serves 2 to 3

Ingredients:

  • 1 packet noodles
  • ½ tsp vegetable oil
  • 1 large onion, chopped
  • 2 pips garlic, chopped
  • A generous pinch dried oregano
  • A generous pinch dried thyme
  • 1 bay leaf
  • 2 medium sized tomatoes, chopped
  • 1 small tin mushrooms, sliced or whole
  • 2 tbsp tomato paste
  • 1 tin tuna (packed in water)
  • Salt, pepper and sugar to season

Directions:

  1. Heat oil and fry chopped onions and garlic until onions are translucent.
  2. Add dried herbs, cook for a few minutes and then add tomatoes and mushrooms. Add tomato paste, if using.
  3. Season to taste and simmer for a few minutes. Add tuna and serve with cooked noodles.
