Malaysian Recipe : Nonya Fried Rice


  • 10g garlic, chopped
  • 50g prawns, shelled (keep the tails)
  • 4 egg whites, lightly beaten
  • 150g cold cooked rice
  • 10g chilli mint paste
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Chilli mint paste:

  • 1 tbsp chilli boh
  • 1 tsp chopped mint
  • 1 tsp chopped wild ginger bud (bunga kantan)
  • 1 tbsp oil


  1. First, prepare the chilli mint paste. Preheat a shallow pan and add the oil. When the oil is hot, sauté the chili boh, mint and ginger bud together until fragrant. Dish out and set aside until required.
  2. Preheat a wok and add the olive oil. When the oil is hot, sauté the garlic until fragrant before adding in the prawns. Stir fry for a few seconds.
  3. Push the prawns to one side of the wok and pour in the beaten egg white. Stir-fry quickly in a rubbing motions to break up the egg.
  4. Add the cold rice and chilli mint paste.
  5. Mix thoroughly and season to taste with salt and pepper.
  6. Dish out onto a serving plate.
