Malaysian Recipe : Nyonya Style Ulam Rice

Cooking time: 40 mins
Serves: 6
Ingredients:
- 4 bowls cooked rice
- 150 g Mergui salted fish ( Penang salted fish)
- 100 g dried prawns
- 1 tbsp freshly ground pepper
- 5 pcs limau purut leaves, cut finely
- 1 pc kunyit leaf, cut finely
- 3 pcs cekur leaves, cut finely
- 1 thumb-sized ginger, sliced finely
- 1 thumb-sized galangal, sliced finely
- 1 thumb-sized turmeric, sliced finely
- 10-12 shallots, sliced finely
Directions:
- With 2 tbsp oil, lightly fry salted fish till it is fragrant. Allow to cool slightly. Pound the salted fish finely.
- Deep-fry dried prawns till crispy. Discard the oil. Set aside to cool.
- In a large bowl, combine all ingredients together and mix well.
- Serve cold.
