Malaysian Recipe : Otak-Otak Ikan Melaka

Preparation and cooking time: 30 min
Serves 8 to 10
Per person : 9g fat, 146 kcal (611 kilojoules)

Ingredients:

  • 300 g prawns, shelled
  • 6 shallots
  • 5 candlenuts (buah keras)
  • 2 stalks lemon grass
  • 6 dried chilies, soaked
  • 2 cm fresh turmeric
  • 1 kg fish meat, cut into cubes
  • 1 cup thick coconut milk
  • 6 eggs
  • 1 Ikan Bilis Stock Cube (Maggi)
  • Salt to taste
  • 10 pcs banana leaves, blanched
  • 10 pcs 'daun kaduk'
  • 20 toothpicks

Directions:

  1. Finely blend ingredients A. Stir in fish meat, coconut milk, eggs, ikan bilis stock cube and salt to taste.
  2. Take two tbsp of the mixture, place it in banana leaves and cover with 'daun kaduk' leaves.
  3. Wrap it like a 'tapai', secure the edges with toothpicks.
  4. Place in a hot steamer and steam for 10 minutes. Remove from steamer and serve hot.
