Malaysian Recipe : Oyster Sauce Chicken

Ingredients:

  • 1kg whole chicken
  • 1 tbsp soy sauce
  • 1 tbsp sherry
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
  • 1 tsp salt
  • 3 tsp corn flour
  • ¼ cup vegetable oil
  • 1 clove garlic, crushed
  • 1 large onion, sliced
  • 1 red capsicum, sliced
  • 1 green capsicum, sliced
  • 1 tbsp oyster sauce
  • ¼ cup chicken stock

Directions:

  1. Fillet the chicken, removing skin and bones to make chicken stock. Cut the chicken flesh into slices, and place in a bowl.
  2. Pour in the soy sauce, sherry, vegetable oils and salt.
  3. Sprinkle 2 tsp of corn flour on top, and mix together. Allow to marinate for 20 minutes.
  4. Heat wok, add oil and garlic. Sauté the onion until transparent then add chicken and cook over high heat for 2 minutes.
  5. Add the capsicum, reduce heat and put in the oyster sauce, stirring continuously. Cook another one minute only.
  6. Blend 1 tsp corn flour with chicken stock and add to mixture. Correct seasoning, cover with a lid and simmer for 2 to 3 minutes.
