Malaysian Recipe : Paper Wrapped Chicken

Ingredients:

A:

  • 1 tbsp cornflour
  • 2 tbsp water

B:

  • 1 tsp salt
  • 1 tsp MSG
  • 1 tsp sugar
  • 2 tsp sesame oil
  • ¼ tsp pepper
  • 1 tbsp light soy sauce
  • 1 tbsp ginger juice
  • 3 tbsp lard or oil
  • 1 tbsp brandy or sherry
  • Cellophane or ‘glass’ paper
  • 3 lbs chicken, cut into pieces
  • Oil for deep frying

Directions:

  1. Cut the cellophane or ‘glass’ paper into 8 inch squares.
  2. Blend A in a bowl. Add B, stir well and pour over the chicken. Marinate chicken for 2 hours.
  3. Wrap up a few pieces of chicken in each piece of cellophane paper and staple the edges.
  4. Heat oil. Fry paper-wrapped chicken till light brown. Lift chicken onto a wire sieve to drain.
  5. Serve hot, leaving wrappers on.
