Malaysian Recipe : Rendang Mami Pulau Pinang

Serves 8 to 12
Per person : 17g fat, 275 kcal (1150 kilojoules
Ingredients:
- 8 shallots
- 3 cloves garlic
- 4 cm ginger
- 20 dried red chilies, soaked
- 2 stalks lemon grass
- 1 sachet Curry Nasi Kandar Mix (Maggi)
- ½ cup cooking oil
B:
- 5 cm cinnamon stick
- 3 cardamom
- 2 star anise
- 6 onions, sliced
- 3 sprigs curry leaves
- 1.5 kg chicken, cut into 12 pieces
- 250ml evaporated milk
- 1 chicken stock cube (Maggi®)
- 3 tbsps dark soy sauce
Directions:
- Blend ingredients A until very fine. Stir in Curry Nasi Kandar Mix and set aside.
- Heat oil and stir fry ingredients B until lightly brown.
- Add ingredients A mixture and fry until aromatic. Add chicken pieces and fry for 2 minutes.
- Stir in evaporated milk, dark soy sauce and chicken stock cube, Simmer until chicken is tender and gravy slightly thickens.
