Philippines Recipe : Rolled Pancake - Lumpiang Sariwa

Ingredients:
- 2 cloves garlic, chopped
- 1 onion, thinly sliced
- 2 tbsp cooking oil
- 250g boiled beef, diced
- 200g medium shrimps, chopped
- 80g cooked chicken, chopped
- 300g carrots, julienned
- 60g long beans, thinly sliced
- 150g cabbage, shredded
- 18-20 pancakes
- Lettuce leaves
- A little water
Brown sauce ingredients:
- 80g sugar
- 1 tbsp cornflour
- 2 tbsp sweet soy sauce
- 1 clove garlic, finely chopped
Directions:
- Saute onion and garlic in oil until tender. Add beef, shrimp and chicken. Simmer uncovered for 5 minutes, stirring frequently.
- Add carrots, long bean and water. Cook for another 5 minutes. Add cabbage and salt, stir until cabbage is done. When all the vegetables are cooked, remove to cool.
- Place a pancake on a platter. Top with a lettuce leaf. Spoon cooled vegetable mixture onto it. Roll pancake up, folding in both sides. Serve immediately with brown sauce.
- To prepare brown sauce: Mix sugar and cornflour. Stir in stock and soy sauce. Keep stirring till mixture boils, then lower heat. Add garlic and stir till sauce thickens.
