Malaysian Recipe : Sago Dessert

Ingredients:

  • 100g sago
  • 80g mung bean flour
  • 2 liters coconut milk
  • ¼ cup sugar
  • Pinch of salt

Directions:

  1. Soak sago in cold water for 10 minutes, then drain water and place sago into a deep saucepan with enough boiling water to cover. Allow to cook until sago is soft and none have hard centres.
  2. Blend the mung bean flour with a little coconut milk. Add sugar and salt.
  3. Heat the balance of coconut milk in a saucepan and pour into the blended flour mixture, stirring occasionally. Mix in sago and simmer until the mixture thickens to the consistency of blancmange.
  4. Pour into a shallow tray or individual molds and allow to set in the refrigerator for 30 minutes.

Note: To add color to this dessert, multi colored sago is sold in Indonesia .
