Malaysian Recipe : Sambal Pucuk Paku (Stir fried Fern Tips with Sambal)


  • 2 tbsp cooking oil
  • 2 cloves garlic, chopped
  • Sambal paste (ground)
  • 5 fresh red chillies, seeded and sliced
  • 3 shallots
  • 30g dried shrimps, washed, roughly chopped
  • 250g fern tips (pucuk paku), cut into 5cm lengths*
  • 2 fresh red chilies, sliced
  • ¼ tsp salt, or to taste


  1. Heat oil, add garlic and sauté until fragrant. Add the sambal paste and continue frying for 2 minutes more or until fragrant.
  2. Add the dried shrimps and fry until shrimps started to “pop” in the wok. Immediately mix in the fern tips for 30 seconds, adding 1 to 2 tablespoons of water if necessary. Season to taste and dish out to serve.
  • Use only the tender parts of the fern tips, which are about 15-20cm from the top ends. To get 250g of tender fern tips, you’ll need 400-500g of fern tips.
