Malaysian Recipe : Sambal Udang

Prawns in Hot Spicy Paste


  • 21 oz medium sized prawns, shelled and deveined
  • Pinch of salt
  • ½ tsp sugar
  • 4 oz frozen spicy paste
  • ½ tsp salt
  • 1 tsp tamarind, mixed with 3 fl oz. water and strained
  • 4 oz grated coconut squeezed to obtain 3 tbsp First-round milk


  1. Season prawns with pinch of salt and ½ tsp sugar and set aside.
  2. Heat a wok. Put in frozen spicy paste, cook over low heat till oil bubbles through (1/2 minutes)
  3. Add the rest of the ingredients except the prawns and cook till mixture comes to the boil.
  4. Add prawns and stir in pan till prawns are cooked, about 3 to 4 minutes. Serve hot or cold.
