Malaysian Recipe : Seafood Rice

This is a one-dish meal.

Serves 6 to 8

Ingredients:

  • 5 cups Basmati rice
  • 10 large prawns, washed and cleaned well, leaving shells intact
  • ½ cup diced carrots
  • 2 cm piece cinnamon
  • 1/2tsp turmeric powder
  • 100g dried squid, cut into small squares and soaked in water overnight
  • ½ cup cooking oil mixed with 1 tsp ghee
  • Salt to taste
  • 5 ½ cups water
  • ¾ cup button mushrooms, sliced
  • ½ cup green peas
  • 2 cardamoms

Ingredients to grind:

  • 2 pips garlic
  • 3 shallots
  • 1 cm piece ginger

Directions:

  1. Heat oil and fry ground ingredients, cinnamon and cardamom until fragrant
  2. Add rice, turmeric powder and fry for a while.
  3. Put rice into rice cooker with prawns, carrots, mushrooms, squid and salt. Add water and cook until rice is almost dry. Add peas and continue cooking until rice is dry. Garnish as desired.
