Thai Recipe : Simple Fried Rice

This dish is called Khao Pad Tamada in Thai

Serves 4

This is a sweet fried rice which is simple to make. It’s ideal as a light snack, or as a bed for roast duck or roast pork pieces. Khao Pad Tamada literally means ‘ordinary fried rice’ and it’s very common in Thailand, almost as common as the ingredient that gives it its color, tomato sauce.

Ingredients:

  • 3 tbsp vegetable oil
  • 2 cloves garlic, finely chopped
  • 1 onion, finely chopped
  • 3 tbsp dried shrimps, soaked 5 minutes and drained
  • 5 oz. any meat, cooked and cut into bite-sized pieces
  • 4 tbsp bottled tomato sauce (ketchup)
  • 1 tsp sugar
  • Pinch salt
  • 1 lb cooked rice (preferably chilled overnight)
  • 2 eggs, lightly beaten
  • 1 tomato, diced
  • ½ capsicum, chopped
  • Fresh coriander leaves, to garnish

Directions:

  1. Heat oil in a large wok over medium heat. Stir fry garlic and onion until garlic is golden. Add dried shrimp, meat pieces, tomato sauce, sugar and salt. Stir fry for about 1 minute, then add rice. Stir well to combine.
  2. Push rice to one side of wok. Add a little more oil and pour in beaten eggs. Allow to set slightly, then scramble. Stir eggs through rice. Stir in tomato and capsicum. Remove from heat. Garnish with chopped coriander leaves.
