Malaysian Recipe : Singgang Terengganu

Serves 4
Per person : 2 g fat, 117 kcal (740 kilojoules)
Ingredients:
A:
- 6 red and green bird's chilies
- 5 shallots
- 4 cloves garlic
- 3 cm ginger
- 5 cm young galangal
B:
- 500ml water
- 2 pcs tamarind skins
- ½ cup thick tamarind juice or to taste
- 1 tbsp sugar
- 1 Ikan Bilis Stock cube (Maggi ®)
- 500g fish fillet, cleaned
Directions:
- Thinly slice ingredients A. In a saucepan, combine ingredients A and B.
- Boil over medium heat for 15 minutes or until aromatic.
- Add fish pieces and simmer for 10 minutes. Remove from heat and serve.
