Malaysian Recipe : Stir-fried Prawn in Fermented Soya Bean

Also known as Three Aromas Fish

Ingredients:

  • 500 gm tiger prawn, about 10x
  • 1 tbsp fermented soy bean, minced
  • ½ tsp garlic, chopped
  • 2 chili padi, diced
  • 1 tsp Shaoxing wine

Seasoning:

  • ½ tsp oyster sauce
  • 1/3 tsp light soya sauce
  • Pinch of salt and sugar

Directions:

  1. Remove legs of prawn, devein, clean and pat dry. Cut into pieces.
  2. Heat up wok, blanch prawn in hot oil, remove prawn when prawn turns to red. Drain well and ready to use.
  3. Heat up 2 tbsp of oil, stir fry chopped garlic, fermented soya bean and chili padi, return prawn and stir in wine and salt to taste.
  4. Stir fry slightly and ready to dish up.
