Thai Recipe : Sweet and Sour Cucumber Relish

This dish is called Thang Kwa Preow Wan in Thai

Ingredients:

  • ½ cup vinegar
  • 8 oz sugar
  • 1 tsp salt
  • 3 tbsp water
  • 1 small onion, finely diced
  • 1 small carrot, finely chopped
  • 1 green cucumber, finely chopped
  • Fresh coriander leaves, chopped, to garnish

Directions:

  1. Boil vinegar, sugar, salt and water in a saucepan for 1 minute. Mix onion, carrot and cucumber pieces in a serving bowl. Pour vinegar mixture over vegetables until they are just covered
  2. Taste to see if extra vinegar, sugar or salt is needed to balance flavors. For those who prefer a spicy cucumber relish, add a finely sliced chili or some chili paste.
  3. Garnish with chopped coriander leaves. Serves with satays, fish cakes and crispy deep-fried snacks.
