Malaysian Recipe : Tamarind Chicken (Microwave)

Serves 4 to 6
Ingredients:
- 600 g chicken pieces
- 50 g tamarind pulp and 1 cup water mixed and seeds removed
- 1 tbsps browned onions/garlic
- 1 tsp sugar
- ¼ tsp salt
A: to be blended with 3 tbsps oil
- 15 g dried chili (soaked)
- 20 g shrimp paste
Directions:
- Marinate chicken pieces with tamarind mixture.
- Fry blended ingredients A in casserole on power High, uncovered for 3 minutes.
- Add in chicken, browned onions/garlic, salt and sugar
- Cover and cook on power High for 7 minutes or until meat is done
- Serve hot with rice
