Thai Recipe : Layered Cake

Ingredients:

  • 125 ml water
  • 2 pandan leaves, knotted and lightly bruised
  • 150g granulated sugar

A: Sift

  • 32 g rice flour
  • 62 g tapioca flour
  • 32 g cornflour
  • 360 ml thick coconut milk, from 1 coconut
  • ¼ tsp salt
  • Red, yellow, blue and green coloring

Directions:

  1. Bring water, pandan leaves and sugar to the boil. When sugar has dissolved, remove from heat and discard the leaves. Leave to cool.
  2. Mix coconut milk and salt with all the flour, a little at a time. Stir well till smooth.
  3. Add the sugar syrup and mix thoroughly. Divide into two portionis.
  4. For one of the portions, divide into four. Color them red, yellow, blue and green.
  5. Pour the blue batter into a greased 20cm round tray. Steam till done. Pour ¼ of the plain batter over the first layer and steam again till done.
  6. Alternate the colors till all the batter is used up. Leave to cool before cutting into pieces.
