Thai Recipe : Three Flavored Fish

Ingredients:

  • 3 ikan selar
  • ½ cm turmeric, pounded
  • Salt to taste
  • Oil for frying
  • 4 shallots, coarsely sliced
  • 2 tomatoes, quartered
  • 2 tsp dried shrimp paste, preferably granules
  • 1 tbsp fish sauce
  • ½ tbsp sugar
  • ½ tbsp lime juice
  • 4-5 cili padi/bird’s eye, bruised

Directions:

  1. Rub the fist with turmeric mixture. Set aside for 20 minutes.
  2. Heat oil, then fry the fish till crisp and done. Place in a serving dish.
  3. Remove all but 3 tbsp oil. Stir fry shallots and tomatoes for 2 to 3 minutes.
  4. Put in dried shrimp paste, fish sauce, sugar, lime juice and cili padi. Stir over medium heat till the oil floats.
  5. Pour sauce onto fish and serve.
