Malaysian Recipe : Tow Yew Bak

Streaky Belly Pork in Soy Sauce

Ingredients:

  • 1 lb streaky belly pork
  • ½ tsp salt
  • 1 tbsp dark soy sauce
  • 2 tbsp lard or oil
  • 2 tbsp sugar
  • 2 pips star anise
  • 2 cloves garlic, lightly bashed
  • 2 tbsp light soy sauce
  • ½ tsp MSG
  • 8 fl oz. boiling water

Directions:

  1. Scrape pork skin of bristles, wash and drain. Rub salt and dark soy sauce into pork and leave for ½ hour.
  2. Heat a heavy bottom saucepan with lard to fry sugar till light golden, add star anise and garlic, fry for 1 minute. Put in the pork, light soy sauce and msg and continue cooking for 2 minutes.
  3. Turn pork over to cook the other side, pour in half of the boiling water and boil over moderately high heat for ½ hour. Add remaining water, cover saucepan and cook over low heat for 45 minutes or till pork is tender. Remove from heat.

To serve: Lift pork onto a chopping board to cut into slices, place on a depp plate and pour gravy over.
